Grilling meatloaf is – in my opinion – the perfect preparation. Charcoal really does this dish justice. The recipe is below is my “Hot Weather Healthy Recession Meatloaf” which is a good mix of being:

  1. Cheap as hell
  2. Healthy
  3. Delicious

To really appreciate this you need to understand that I don’t enjoy spending money, I need to lose a few pounds, and my air conditioner (in my shoddy Texas rent house) is a junker making the idea of baking anything laughable. There. I had to set the scene.

Recipe: Hot Weather Healthy Recession Meatloaf

Summary: A delicious, cheap to make grilled meatloaf that is actually pretty damn healthy.

Ingredients

  • 1 lb ground turkey
  • 1 egg
  • 3 finely chopped pieces white bread
  • 1 finely chopped roasted red pepper
  • 4 tablespoons vidalia onion relish
  • 2 pinches kosher salt
  • 2 pinches freshly ground black pepper
  • 1/2 cup favorite bbq sauce

Instructions

  1. Preheat a charcoal grill to medium heat. Place coals on one side of the grill to create direct and indirect grilling areas.
  2. Mix ground turkey, egg, bread, red pepper, relish, salt, and pepper in a large bowl. Be sure to fully incorporate all ingredients. Let mixture sit in the refrigerator for at least 30 minutes.
  3. First, sear the meatloaf directly over to coals to create grill marks. Brush barbecue sauce over the meatloaf after the first flip, and move to indirect grilling area, flipping again. Now brush barbecue sauce over the remaining loaf. Add the thermometer to the center and cover the grill.
  4. Remove the thermometer at 160 degrees, let the meatloaf sit, and you’re ready to slice and serve!
